Located in the heart of the valleys that furrow lMontes Norte of Ciudad Real (near the Cabañeros National Park) our livestock farm enjoys a privileged situation in an environment that abounds with sturdy, leafy and spaced by parts vegetation that characterizes this area of low Manchego forest.And it is that, being so north of the region, one of the most interesting elements of our location is its natural surface, which is far from the typical postcard evoked by the plains of Castilla-La Mancha.

Our animals graze daily among a multitude of distinctive species of the Mediterranean forest, such as holm oaks, melojos, cork oaks, poplars and chestnuts, and complement their diet rich in cereals while surrounded by aromatic shrubs such as rockrose, thyme, lavender and rosemary .

So, we get a grazing milk rich in nutrients and vitamins, which gives the cheese a unique flavor and consistency, and that has a lot to do with the good quality of life and varied natural diet that our sheep enjoy 365 days of the year.

In EL MANOJAR Artisan Cheese We make all our products by hand, in the most natural way possible, without using preservatives, additives or lysozymes during their manufacture, nor fungicides or paraffins when processing them for sale. In this way, we obtain a unique cheese, which preserves all the nutritional properties of raw sheep's milk and gives us a genuine flavor and aroma.
